A No-Bake Seven-Ingredient Miracle
It takes very few things for these little wonder bites to come together and here’s the thing, an oven IS NOT ONE OF THEM. A real simple list of ingredients that you mix up, ball up, chill up, and then eat ’em up all the days through.

Three Steps To Make These Energy Bites
Who doesn’t love a three-step process?! Classic. Easy. Get us to pecan pie bites quickly, please.
- Throw everything in the food processor and buzz up until mostly smooth and kinda dough-y.
- Start balling them up! And pop them on a parchment lined sheet.
- Chill and store in the fridge or freezer (we prefer the freezer, but both are great!)
Made that last guy a step even though it’s really not a step so much as a yay-you’re-done-pecan-pie-energy-bites-forever declaration. See? So easy! These keep saving us over and over and over.
Made To Your Heart’s Desire
The flexibility of these angels is also A+. You can throw in different nuts, use honey or another liquid sweetener you prefer. Want a different nut butter option? That’s a thing you can do! Want to skip flaxmeal because that isn’t a pantry-stocker for you? You’re a champion, who needs it. Did some cranberries or chocolate chips fall in that food processor while you were mixing?! OK YES, YOU’RE DOING IT. SNACK NIRVANA IS ON ITS WAY.
Whatever you make them, they are great for an easy grab-and-go breakfast, or awesome to put out on the table for the kiddos to occupy their little hands and tum tums while you get dinner prep going, maybe you’re doing laps through the house while you WFH and why not stop and grab one out of the fridge and pop it in your mouth on the move? - 1/2 cup oats
- 1/4 cup flaxmeal

- Mix everything in the food processor until it’s nice and smooth-ish, like a dough.

We haven’t tested this recipe with an oat substitute. But, you can leave them out entirely!
What type of oats are to be used?
We used old fashioned rolled oats!
These are so yummy! A nice healthy sweet treat. I recommend toasting the oats first. The pecans as well if they’re raw.

My kids and I made these as written but with more “heaping” type of scoops 😛 – I needed to add a bit of water to make them stick together.
We used the medjool dates from Costco – the medjool dates from Aldi are smaller but I think I would use the same amount as if you need any more sweetness you can always add a bit more maple syrup.
The kids love them – the adults love – it’s a win for everyone!

I made it! It was very easy as use food processor. But rolling them even with cookie scoop took long! It was a bit hard to make balls, so I added extra vanilla and then went well. Yes, taste was so yummy! Thanks always for delicious recipes:)

I’ve made these several times. They’re definitely kind of loose, but they firm up a lot in the fridge. I just try to get them to barely hang together knowing that.

Oh, my. I can’t tell you how much I love the Pecan Pie Energy Bites. The problem with most granola bar type recipes is that they are too sweet. With just dates and real maple syrup providing the sweetness, these are perfect. Perfect!!! I had to use peanut butter and skip the flax meal because I wanted to make them as soon as I saw the recipe. But still perfect. Did I say I love these?

Used prunes instead of dates since that’s what I had on hand…they are tasty and definitely remind me of pecan pie. My husband said they aren’t as good as the cookie dough ones —-can’t argue with chocolate and pb—still these are better as a snack whereas the others can satisfy dessert.
These are TO DIE FOR!!!! So amazing. I followed another reviewer’s recommendation to toast the oats on medium / medium low heat.
