First up: hashbrowns. I bought a pre-shredded bag and fried them up with lots of seasoning.

Next up: eggs and sausage. Easy.

Do not forget: the cheese.

Steps to make a breakfast crunchwrap.

Basically load it up, grab a filler piece, and fold it all up. Fry it in a skillet and prepare to be changed.

Breakfast Crunchwrap

Description

Breakfast Crunchwrap! Crispy hashbrowns snuggled up with scrambled eggs and sausage, plus a layer of creamy melted cheese, wrapped in a tortilla and grilled to golden brown perfection.


Ingredients

Hashbrowns

  • 1 lb. hashbrown potatoes
  • 1/4 cup oil for frying
  • 1 tablespoon of taco seasoning, Southwestern spices, or Cajun spices
  • salt to taste

Crunchwraps

  • 1/2 lb. ground pork sausage
  • 6 eggs, beaten
  • 7 oz. shredded V&V Supremo® Chihuahua® Brand Quesadilla Cheese (love this for smooth and creamy melting!)
  • 5 burrito-sized flour tortillas

Instructions

  1. Hashbrowns: Heat the oil over medium heat in a large, wide skillet. Working in batches, add hashbrown potatoes in a thin layer, dust with some spices, and press them gently with a spatula. Cook until golden brown and crispy. Flip and repeat. Remove in chunks with a spatula and transfer to a paper towel lined plate. Season with salt.
  2. Sausage and Eggs: Brown the sausage in a large nonstick skillet. When the sausage is cooked, drain off excess oil. Turn the heat down. Add the eggs to the hot pan with the sausage and gently stir around with a spatula until just barely set.
  3. Tortilla Pieces: Lay a large tortilla on a flat surface. Cut into fourths (you’ll use these as a filler piece).
  4. Crunchwrap Time: Layer hashbrowns, sausage and egg mixture, and your V&V Supremo® Chihuahua® Brand Quesadilla Cheese. Place a filler piece of tortilla over the top and fold the edges of the tortilla inwards, one section at a time. It will kind of make a star shape (watch the video for a demo). Place in a hot oiled skillet. Cook for a few minutes on each side until the exterior is firm, crunchy, and golden brown. Cut and serve!

Notes

You can make these ahead and freeze them! Your future self will thank you. When you’re ready to eat them, thaw them out, pan-fry, and voila. Easy brunching on the weekend!

    I’ve looked everywhere for that cheese. The handful of places local to me that the website pointed me towards don’t actually carry it and my Costco doesn’t either. I realize other places might have it, so if anyone else in the Pittsburgh area has found it, please tell me! The brand website has sent me on wild goose chases.

          Yep, Walmart has that brand of cheese here! My wife and I tried this recipe out, it was fantastic…I would say it even beats the sausage burritos that are our favorites at our local coffee shop!

If you want nutritional information, purchase a cookbook of recipes that is guaranteed to provide that information; don’t criticize a FREE blog. If a certain recipe doesn’t have nutritional information, you can also easily use the link to plug it into an app like MyFitnessPal and calculate it yourself.

          This kind of comment really showcases what is most destructive in the thinking in our times. #1, if someone doesn’tline up with every single thought you yourself have, then be as nasty as possible. #2 that food is only valuable if it fits a certain nutritional fetish, so gimmee the details so I can rule it in or out based only on numerical factoids, no regard for the delish factor included in the decision. And, uh, sorry, but IF you have a specific nutrition need medically, generally it’s best to have a good sense internally what yourunique needs are. For example, I

Some spinach, swap in turkey sausage, some amazing vegan nut cheese from the selection on my fave food blog….lotsa ways to benefit from the amazing creativity of a post like this without breaking your own dietary needs.       I believe there are more constructive ways to request nutritional information than to be so rude. There are plenty of calculators available for you to plug in your own brands of the ingredients to see how a recipe shakes out.

      I don’t know why anyone would want the nutritional information for this recipe. If you’re counting calories, pork sausage, hash browns, and a flower tortilla are a nonstarter.

      I’ll hold off on rating this recipe until I actually make it, but come on: how could this be anything other than 5 stars? This thing looks like heaven.

    If you want to make these in advance, would you freeze them before or after pan frying? Thinking the wrap may not “hold” together if not pan fried first?

    This was fantastic! I’ve made POY’s vegan crunchwrap before, and the idea of another overstuffed and browned tortilla couldn’t be passed up. I did sub diced onion, zucchini, and yellow pepper for the sausage, and used a good quality cheddar that I grated myself. My hub used salsa to dip his, and I used Cholula green pepper hot sauce on mine. Ah-mazing! Thanks for another great recipe!
