Love these! They are much easier to shape and less crumbly than other energy bites I’ve made, and are of course delicious 🙂
Hold on, hold on. I’m envisioning a perfect fall snack.
It has pumpkin, oats, maple, chia seeds, almond butter, pumpkin seeds, sea salt, and cinnamon all packed together in a densely-textured nutritional powerhouse bomb. It’s just sweet enough, and it slightly resembles cookie dough, but with more of a fall cookie flavor and more of a feel-good healthy body buzz.
It requires no baking and no chopping. It’s made in 15 minutes and easily stored in the fridge or freezer for easy grab-a-ball-and-go level snackage.
It can be a breakfast, snack, or two-bite dessert.
And also, as much as we love them, it’s made with zero dates.
Are you into this or ARE YOU INTO THIS?
How To Make Pumpkin Energy Bites
Ready? Put everything in your food processor.
Blend it up. Add chocolate chips because joy is important, too.
Roll it into balls. Freeze, refrigerate, do whatever you do.
Okay, that’s all. I’m serious. Pumpkin Energy Bites + Hungry Fall You is a winning combo that was made for such a time as this.
Slightly sticky, dense, seedy, chocolate chippy, super healthy, and just the right amount of cinnamony maple sweetness. Fine, Pumpkin Energy Bites, YOU WIN.

Pumpkin Energy Bites
- Total Time: 15 minutes
- Yield: 25–30 bites 1x
Description
The Best Pumpkin Energy Bites! Made with oats, pumpkin, almond butter, maple syrup, and pumpkin seeds. Naturally sweet, super healthy!
Ingredients
- 2 cups oats
- 1/2 cup canned pumpkin puree
- 1/4 cup almond butter or peanut butter
- 1/4 cup chia seeds
- 1/4 cup pumpkin seeds
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional, see notes)
- 1/2 cup maple syrup or honey
- generous pinch of salt
- 1/2 cup dark chocolate chips
Instructions
- Pulse all ingredients (except chocolate chips) in a food processor until well-mixed.
- Add chocolate chips and pulse a few more times until they are in small pieces.
- Scoop mixture and roll into balls. Freeze until solid and store in the freezer or refrigerator.
Notes
Cinnamon vs. Pumpkin Pie Spice: I actually prefer this with straight cinnamon because I’m not a huge fan of the nutmeg that is often found in pumpkin pie spice. Just do whatever your heart feels!
Almond Butter vs. Peanut Butter: Really I think any type of nut or seed butter would work here! It’s just about the flavor you want. I liked peanut butter the best and I didn’t feel like it was overly peanut buttery.
Honey vs. Maple Syrup: Both work really well. Maple syrup is great if you want to keep it vegan. My favorite was 1/4 cup honey and 1/4 cup maple syrup – best of both worlds. 🙂

This look delicious! Would it work if I just left out the chia seeds, or should I replace them with something? (I’ve found they really upset my stomach!)
Hi, Jamie! We’d recommend just adding more pumpkin seeds instead.
These sound so good!
Can I make my own pumpkin purée – I don’t find canned purée where I live.
Definitely! Here’s a recipe for that: https://www.thepioneerwoman.com/food-cooking/recipes/a11184/make-your-own-pumpkin-puree/
Do you have any seedless energy bite recipes?
These look so good, and are perfect for fall! I can’t wait to make some!

just witnessed the entire insta tutorial – such a great recipe!!! so healthy and yummy.
I ALSO find that my dislike of nutmeg is a barrier to entry for most pumpkin spice treats so, thank you, I feel so seen.
Could I use salted pumkin seeds and not add additional salt?
This is so good! I totally forgot to pick up pumpkin seeds but I had raw walnuts in the house and used those instead and it seemed to work out fine. I ate a lot of the batter before freezing.
Can’t wait to try these tonight! Any tips on defrosting? I plan on likely keeping them in the freezer the whole time. If I take them out of the freezer around 8am on my way to work do they need to pop back in the fridge when I get to the office? Just wondering how to best defrost for easy snacking. Thanks!
We’d recommend thawing the energy bites in the fridge overnight and you can pop in the fridge when you get to work.
Energy bites without coconut! I’m all over it 🙂
That Pumpkin bite looks quite rich in “Fiber,” which is good for “colon cleansing.” 🙂
I would say that this is more of a fist of yum! incredible, you really know your food Lindsay! I just added this kitchen tool to my kitchen and it made my cooking alot easier, I love it! https://www.amazon.com/Instant-Pot-Pressure-Cooker/dp/B07WRCFJ96/ref=as_li_ss_tl?pf_rd_p=4f806485-b5f4-56b2-a50c-d6da6d1e5ab8&pf_rd_r=4RC7GW7M76M5X5ZZB0E5&pd_rd_wg=F1wKA&ref_=pd_gw_ri&pd_rd_w=HRl7I&pd_rd_r=d2ebc1a1-9157-423d-8a34-d25694f7ae39&linkCode=sl1&tag=oderhem-20&linkId=73806c685f245e288f3e4794e7ff1266
Can you leave out the chia seeds? Or maybe sub some flaxseed, instead?
Hi, Jennifer! Yeah, we think flax could work here or just adding in more pumpkin seeds. 🙂
Made these last night and they are incredible! I didn’t have any vanilla extract on hand, so I added vanilla protein powder and they are exactly what I had hoped they’d be – so tasty and healthy!
YUM! So glad you enjoyed these, Lindsey!
This looks awesome. What kind of oats are used in this? Instant?…quick cooking?…old fashioned?…steel-cut?
We just used rolled oats for these bites. 🙂
I love that these don’t have dates! I’m put off by so many of these “ball” recipes because of my dislike for them. I’m going to grab all the stuff to make a batch of these this weekend!
YES. Energy bites without dates – we’re here for it! 🙂
Great post.
Just made these! They’re SO good. The texture is almost like cookie dough. I used peanut butter but it is not overpowering at all. I opted for pumpkin pie spice and cinnamon because I’m all in on fall flavors. I did not add chocolate chips to the mix so that my vegan friends could eat them (also used maple syrup, not honey, for this reason). I did, however, melt chocolate and drizzle it on top of half of them. I left the other half naked. Chocolate is everything to me but these babies are delicious with or without it
Yes to the pumpkin pie spice and cinnamon. We’re all about embracing fall! Glad you enjoyed these energy bites, Anna! 🙂
It should end cooking by itself in residual warmth.
How many bites are in one serving? Thanks!
The nutrition information is for 1 energy bite, but we’d say 1-2 energy bites would be a serving. 🙂
I love your recipes! The rest are always the best. I’m a simple girl from Houston, TX and I have recently started a YouTube channel called Gourmet Slay with Tiny T. It targets beginner cooks or anyone looking for a simple meal. Your recipes have truly inspired me. Thanks good your hard work!
These are amazing!!!! i used the maple syrup and peanut butter. Very moist and delicious!!!
So great to hear, Rose! 🙂
I made these into bars instead of bites and they are incredible! Really easy to make and I love the taste and texture. I went with peanut butter and would agree that the flavor is not overpowering. A snack time win!
Yay! We love snack time wins!
I made these as instructed and they are amazing! I’ve been searching for a lactation “cookie” recipe that was still healthy, and given that the base of this is oats, I think I may adjust it second time around and use flax instead of chia and toss in some brewers yeast. So excited to try this way! Thank you for the awesome recipes!!
Excited for you to try these, Brittany! Enjoy!
Nice recipes! Thanks to you.

I made these last night! They are excellent! 🙂
So happy to hear that, Stephanie! 🙂
These look great – and no coconut! I’m going to whip up a batch, heavy on the pumpkin seeds. Thanks for the great recipe
Enjoy, Gerard!
For anyone who doesn’t own a food processor – I made these by grinding up the dry ingredients in a blender (first oats by themselves, then the seeds together, then the chocolate chips for a few pulses), then I mixed all the dry ingredients with the wet ingredients in a bowl with a spatula. It worked great! I actually liked the texture better than when I made these at my mom’s house using here food processor.
Thanks for the tips, Katie! 💯
