Trader Joe’s Sun-Dried Tomato Focaccia Turkey Sandwich

I made this last week as a quick weekend meal. I used homemade pesto. It was sooooo good. I’m planning to bring it to a girls weekend next! Thanks for an easy, throw together, awesome sandwich!
This one goes in my personal sandwich hall of fame. We threw together a video of this sandwich on a whim a few months ago and it’s now up to 4 million views, so apparently it’s not just me that likes the bite of red onion with pesto mayo, juicy tomato, turkey, and greens on pillowy sun-dried tomato focaccia in a huge, heavily sauced handheld form.
I’ll just say, it’s worth the trip to Trader Joe’s.

How To Make This Sandwich
Step 1: Toast and Cut The Focaccia
Toast your bread at 400 degrees for 5-8 minutes (it’s just better). Then, keeping it sideways, cut the bread with a serrated knife horizontally through the middle.
Take the top piece off and set it aside. Keep the crumbly side facing up!
Step 2: Spread a Layer of Pesto Mayo
I use the Costco pesto mixed with mayo here, but this basil sauce is also A+!
Step 3: Add Your Sandwich Materials
I like turkey, tomato, sprouts or greens, and red onion.
Step 4: Dollop with a Little More Mayo
It seems weird, but I just dollop a bit more mayo right on top so you don’t have to tip your top piece of bread upside down and lose all the crumblies.
Step 5: Place the Top Piece Back On and Squish It Down
Nice and secure!
Step 6: Cut and Serve
That clean slice through the center is so satisfying!
Lindsay’s Notes
This is my soul sandwich.
I have eaten approximately 73 of these sandwiches over the last three months. As it turns out, the combination of pesto mayo, sun-dried tomato focaccia, turkey, red onion, tomato, and some greens really means something to me on a deep level. Please write this recipe on my gravestone.
Besides being craveable, munchy sandwich goodness, it is also there for me (and my family) when I have zero energy left, which just makes me love it even more.
This is our go-to for red alert / everyone is hungry / running out the door type of nights.
I always think I’m just going to eat one wedge, but then somehow I eat another? And half of another? It’s the layers, the textures, the flavors. The sharp bite of the onions against the creamy pesto mayo. The juicy tomato with the heartiness of the turkey and bread. Ugh.
It’s practically a lifestyle.
If you love a good Trader Joe’s meal hack, I highly recommend trying this Mushroom Sandwich or Scallion Pancake with Eggs!

Trader Joe’s Sun-Dried Tomato Focaccia Turkey Sandwich
- Total Time: 20 minutes
- Yield: 6 servings 1x
Description
Pillowy sun-dried tomato focaccia gets piled with pesto mayo, turkey, juicy tomato slices, and greens. This sandwich is a beauty and practically a lifestyle!
Ingredients
- 1 loaf of Trader Joe’s sun-dried tomato focaccia
- one 7-ounce package deli turkey
- 1 large tomato, thinly sliced
- one handful of greens – sprouts, microgreens, spinach, etc.
- a few pieces of thinly sliced red onion
- 1/4 cup mayo
- 1/4 cup pesto (I like the Costco brand pesto)
Instructions
- Preheat the oven to 400 degrees. Toast the focaccia in the oven for 5-8 minutes.
- Mix the pesto and the mayo together in a small bowl to make a pesto mayo.
- Keeping the bread flat on a cutting board, turn your serrated knife sideways and slice horizontally through the center of the loaf. (You don’t want to flip the top and lose those yummy crumbles.) Keeping the top piece flat, set it aside.
- Layer the sandwich with pesto mayo, turkey, tomato, greens, red onion, and finish with dollops of pesto mayo. I dollop the top layer of pesto mayo directly on top of the greens and onions so that I don’t have to flip my top piece upside down to spread it on the bread.
- Gently press your top piece back on top of the sandwich. When it’s nice and secure, use a large knife to cut through the sandwich. I usually cut it down the middle and across 3 times for a total of 6 pieces. Serve and enjoy! This is sandwich goals.

Frequently Asked Questions For This Sun-Dried Tomato Focaccia Turkey Sandwich
Any deli meat would be great in this sandwich. I also think it would be really good with bacon!
Not long! The sandwich will start to get soggy – especially the greens. If you don’t need the full loaf, just cut a chunk of bread off instead and build your smaller-size sandwich that way!
Yes! Just layer in your favorite veggies or a meat alternative in place of the turkey.
The focaccia is not gluten-free or dairy-free, so I think you might have to hunt for either a loaf of gluten-free, dairy-free focaccia, or make some yourself! You’d also need to find (or make!) a vegan pesto to use in place of the regular pesto, since traditional pesto is made with Parmesan cheese.
People have told me they like it with mozzarella cheese, bacon, steak, balsamic… the sky is the limit!
I just make it this weekend and it was amazing! Need to grab more focaccia at trader joes and keep in freezer. I just made a quick basil sauce and turned out great!
Hey Nicole,
Just how long did it take you to complete the entire preparation of the meal, if I may ask? 🙂
Sounds absolutely delish! Too bad I’ll never be able to make it because not all of us have a Trader Joe’s near us. And they don’t ship. The bread kind of makes the sandwich, otherwise it’s just turkey with some fixings. So disappointed. My taste buds were working overtime reading this recipe!
I’m not sure where you live, but you can probably find a similar delicious one at another grocery store. I’ve seen all sorts of great breads at Aldi, Walmart, SuperTarget, Whole Foods, Fresh Market, etc., even any of our regional grocers like Publix and Winn-Dixie. (You obvs may have different stores). 🙂 Keep an eye out! (You can even jazz up plain focaccia yourself first with some sundried tomatoes and parm, etc. and bake it.)
Well if you can use any sun-dried tomato focaccia, or as you say “jazz up plain focaccia yourself,” why does the recipe specify Trader Joe’s brand in the first place? You don’t specify brand for anything else in the sandwich. Looks like product placement — usually a cue for me to close the tab and move on — but I don’t see any notation about “paid for by Trader Joe’s.”
Hi, Tom! This recipe is not all sponsored and any type of focaccia bread will work. Lindsay just really loves the sun-dried tomato focaccia found at Trader Joe’s – which is why she mentioned a specific grocer in this case. Hope this helps and hope you love this sandwich!
Oh, my taste buds are tingling just reading about this Trader Joe’s Sun-Dried Tomato Focaccia Turkey Sandwich! As a fan of both Trader Joe’s and creative sandwich combinations, I couldn’t resist sharing my thoughts on this mouthwatering creation.
Firstly, let’s talk about the star of the show—the sun-dried tomato focaccia bread. Trader Joe’s always manages to deliver when it comes to their specialty bread, and this one sounds no different. The rich, savory flavor of sun-dried tomatoes combined with the soft and chewy texture of focaccia is a match made in sandwich heaven. I can only imagine the aroma that fills the kitchen when toasting it.
Now, onto the turkey. Turkey sandwiches can sometimes be a bit predictable, but Trader Joe’s takes it up a notch by using their Smoked Turkey Breast. I love that they choose a high-quality, flavorful option to enhance the overall taste experience. The smokiness of the turkey paired with the vibrant flavors of the sun-dried tomato bread is a combination that is sure to make taste buds dance.
The other components of this sandwich sound equally delightful. The creamy provolone cheese adds a mild, tangy note, while the crisp arugula and juicy tomato slices provide freshness and a satisfying crunch. And let’s not forget about the spread—garlic aioli! I can only imagine how it complements the other ingredients, adding a creamy and garlicky element that ties everything together.
What I appreciate most about this recipe is its simplicity. It’s the kind of sandwich that you can put together in no time, yet it packs a punch in terms of flavor. Plus, the versatility of the ingredients allows for customization based on personal preferences. Add some avocado or a hint of spice with sliced jalapeños—the possibilities are endless.

Dear Lindsey, I love the recipes I’ve tried but don’t need to belong to your blog as I am an elderly woman (87 y/o) , a widow and live alone. So, thank you, Sara Harkness
Made this for a birthday party. So easy and delicious. Great party sandwich.
Hi Kathryn,
I was curious to know, did you prepare it in advance of the party and stored in the fridge? Or did you prepare right before the party and served?
I’m thinking about making this for a birthday party but would prefer to prep in advance so just wondering. thank you!
Woah this is even tastier than it looks! Make these for several days in a row for the whole family. Used sriracha mayo and couldn’t get enough! Going to have to make a Trader Joe’s run now…
So good and so easy!
This was so much greater than the sun of its parts! So easy and so good!!
I made this tonight and it was so good! I couldn’t find the bread so I bought a plain focaccia and some sun dried tomato pesto and spread that on top with extra parm before I baked it. It was perfect!
Super easy and delicious! My Trader Joe’s didn’t have sundried tomato focaccia but they did have organic herb focaccia so I used that instead. I used arugula for my greens and added Monterey Jack cheese. Would definitely make again!
Forgot to rate the recipe in my original review. 5 stars!
It is just a 10/10 food experience. Ate it for 2 weeks straight for lunch!
Amazing sandwich! I’m going to serve this and wild rice soup to my out of town guests the night before Thanksgiving. Thanks so much for sharing .
Yum! Love that idea!
I must make this turkey sandwich at least once a week. My son likes a slice of yellow cheddar on his.
YUM, I finally put this together for the fastest dinner. I used a bag of Trader Joe’s Mediterranean salad as the greens and it was just perfect!
Hi,
I am interested in making this vegetarian and I’m wondering what cheese you might substitute in place of the turkey instead of veggies or a plant-based turkey. Thanks for all your delicious recipes and your help on this one!
Maureen
You could totally do some mozzarella or feta. Also adding some marinated portabellas would be amazing!!!
Made this for the Chiefs game tonight (Go Patrick! Go Travis!) and it was perfect. I added provolone and broiled that with the turkey so it was warm when I served it. Really easy & really good—I’ll definitely make this again!
Yum! Glad you enjoyed it!
The past few times I have added a little of whatever homemade vinaigrette I have on hand to the top and it’s just so so good.
My husband just said I don’t know if anything that could make this sandwich any better! And my 3 and 4 year old boys eat it too! Great fast summer dinner
Made this for lunch today as written except for the greens because I didn’t have any and it was still delicious. This recipe is a keeper! I would give it 10 stars if I could.
Superb sammie! Used TJ Sun-Dried Tomato Focaccia along with lots of leftover turkey I roasted (highly recommend!) Toppings were: the pesto-mayo, dill havarti cheese (TJ) red onion, sliced avocado, spinach, & fresh basil. Fantastic!
Lindsay, I am making this sandwich for my ladies Book club. What would be good sides or appetizers to serve with the sandwich
I’ve made this sandwich before and love it, but I’ve never had a lot of sides to go with it. Thank you so much. I love your recipes.
It would be delicious with a simple salad like this one! And some fresh fruit as well for a nice lunch!
