Meal Prep Lentil Greek Salad! Lentils, tomatoes, cucumbers, pepperoncini, kalamatas, and a big dollop of homemade fresh dill yogurt sauce. YUM.

Hello and welcome and please just know upfront that I am very, very into this lentil-y Greek salad.

Who knew that lentils (black, because pretty), tomatoes, cucumbers, fresh dill, pepperoncini, kalamatas, and a big dollop of the world’s fastest dill yogurt sauce on top could make a person’s life so joyful. Like, calling from the rooftops joyful. HEY YOU! LOOK AT ME! I’M IN LOVE WITH A MEAL PREP GREEK SALAD!

And now I’m going to draw the line in the sand.

You can add tuna to this.

Let’s break this down. I don’t normally like canned tuna, and currently I think there are literally zero recipes on Pinch of Yum that use canned tuna. But here I am opening cans of tuna like it’s my job, because surprise: tuna fits into this salad like a dream.

Tuna thoughts:

  • If you don’t like tuna, that’s okay. Skip it.
  • If you do like tuna, look for a brand that uses responsibly sourced and high quality tuna. I like Wild Planet brand. (They also make canned salmon should you find yourself in need of some salmon burgers later.)
  • If you do like tuna, not to brag, but you’re getting some really awesome nutrition with extra Omega 3 oils and a nice punch of protein. Well done.

But tuna isn’t really the star here. It’s the veg.

Lentils, tomatoes, and cucumbers set up the crunchy, filling, clean-eating base, and then the kalamatas and pepperoncinis and dill yogurt sauce come in and make it a party. Feta on top? I’m not mad.

Now this is what I’m absolutely talking about Lindsay. Something nice and healthy and its portion sized too. I see grilled chicken in there. And talk about grilled food, I am guilty for eating in almost a 4 pound steak yesterday all to myself after grilling it with Mr. Yoshida’s teriyaki sauce and seasoning. I smashed it up real good too. I have a sincere love of grilled food. So please by all means my friend, keep the good blog posts coming with the grilled chicken and delicious food. And more grilled food at that! 🙂

Can’t wait to make this for lunches next week! This is a perfect meal prep recipe – it’s actually quick and easy and feels like it will stay nice for a few days. Also, is very WW friendly, which I know you aren’t going for, but is a huge bonus for me!

Hi We have made the Jalapeno Lime Chicken soup several times now and absolutely love it. It works really well with left over rotisserie chicken too. We just picked off the chicken, boiled the remains for the stock, strained it of course and added the already cooked chicken back at the end. Followed all the rest of your directions SO GOOD. Thanks

Wait, wait, wait. There is such a thing as freeze-dried dill??? Where do I get this thing?
Also, this looks delicious and it may be my lunch next week.

YUM. I’m absolutely in love with this salad! Lentils and dilly yogurt are always a win. I’d never thought to try pepperocinis – they kick this up a notch! I’ve been eating this all week with chopped mixed greens, which I add on top each morning and mix in at lunch time. Next time I’ll slice the tomatoes each morning, too – they’re not holding up so well in the fridge. Will definitely repeat soon!

I put this together at the end of the week because I get tired of cooking by then, and I still want to eat healthy foods instead of instantly resorting to fast food tacos or pizza. I used canned black beans instead of lentils because that’s what my husband prefers and I added diced yellow and orange bell peppers. It was light, healthy, and didn’t require any cooking or really any extra thought… just chopping. There was easily enough for smaller portion leftover lunches too. Next time, red onion and sun dried tomatoes would be great additions. Definitely repeating this week. Thank you!

Hi there! Of course the store I happened to be at only had green lentils. Would you cook them for 3 minutes in the instant pot the same as the black lentils? They are whole green, not split. Thanks!
